Have you ever tasted roasted butternut squash? If you haven’t you should, because it rocks! I never thought I would enjoy it. Squash was always one of those gross foods my mother would eat and I would look at her like she was insane. But after trying it I wish I had tried it sooner. It’s sweet and delicious and comforting. Here’s my favorite butternut recipe.
What you will need:
1 butternut squash
Preheat your oven to 400°
Cut the squash in half lengthwise and scoop out the seeds. Place both halves on a cookie sheet with the cut side up and the skin down. Butter the top of the squash and sprinkle on brown sugar liberally.
Bake for about an hour or until the squash is easily poked with a fork. Remove the squash from the oven and let cool a few minutes. Scoop the flesh out of the skin and enjoy!
