We love our frozen burritos around here! Nothing beats a frozen burrito for a quick, cheap, yummy lunch. But the prepackaged ones at the store are tinny and often not tasty at all. But have hope! Here is my recipe for delicious frozen burritos!
I like to make these babies in bulk so this recipe will reflect that. If you aren’t so sure you want to commit to 30 burritos simply scale back on the ingredients.
What you will need:
4cups Rice (I used white)
Flour Tortillas (I bought a big CostCo bag)
7lbs. Can of Re-fried Beans
5cups Chicken Stock
1/2cup Taco Seasoning
8tbs. Butter (1 Stick)
3cups Shredded Cheese (I used a fiesta blend)
2tbs. Onion Powder
2tbs. Garlic Powder
2tbs. Hot Sauce (I used Tapatio)
4tbs. Chilli Powder
In a large skillet combine hamburger and taco seasoning. Brown hamburger then drain. Set aside to cool. (I actually did this step a couple of days before and kept to hamburger in the fridge in an air tight container.)
Combine rice, chicken stock, and salsa in a large pot. Bring pot to a boil then reduce heat to medium-low and cover tightly with a lid. Simmer for 20min. (I like to stir the rice half way through.)
While the rice is cooking, combine re-fried beans, butter, onion powder, garlic powder, chilli powder, and hot sauce in a large pot. Heat over medium heat until the butter is melted. Add cheese and stir until cheese is melted. Remove from heat.
Assemble the burritos. Lay a sheet of foil on a flat surface. (I use a cookie sheet.) Place a tortilla on foil and fill it with beans, rice, and meat. Fold tortilla into a burrito and roll it up in the foil. Continue until all the burritos are made.
There you have it! A mountain of burritos ready for you to pop into the freezer. These are so good we usually eat a few before they ever make it though:)
