I’m aware that today is Monday and not Sunday. Oops!
Anyway, Sundays are the busiest day of our week. With everything we do at our church we just don’t have a lot of time to prepare food. Up until recently this has meant eating way too much fast food. And I mean eating fast food for breakfast, lunch, and dinner every single week. Yuck! So enough is enough and I’ve began preparing ahead of time. One of my best friends in this endeavor has been my crock pot. I’ve been throwing together super simple dinners in the morning and by the time we come home we have dinner. Yay!
Here is one of the Mister’s favorites: Salsa Chicken! This is so simple it can hardly be called a recipe but here it is.
What you will need:
3 Chicken Breasts, frozen
2 Cups Salsa
Place chicken in the crock-pot. Pour salsa over chicken. Cook for 6-8 hours on low, or 4-6 hours on high. Shred chicken with a fork and serve with tortillas and sour cream. Boom!
I used to make this recipe when I was single and I would slice up bell peppers and add them in as well. I loved the color they added and they would soak up the flavor from the salsa and just be delicious! But the Mister says he doesn’t like anything to detract from the chicken. Oh well, plain meat it is.
